Chicken and dumplings are fabulous, yes. But my absolute favorite way to make this classic dish is with turkey and fresh herbs! This is a great meal when you’re pressed for time (um, hello August back-to-school craziness), as it takes less than 20 minutes from start to table.

You will need cooked turkey to start this recipe. Simply place a frozen turkey breast in a large crock pot and cook on low for 8 to 10 hours. Or, cook it in the oven covered in foil at 200 degrees for 10 hours (overnight). It will be perfect and will fall off the bone. Really, you do not need to add water or anything. It’s that easy! And while no one reading this would ever make this mistake, I did have someone email me once that the turkey wrapper cooked into the turkey. Yes … So remember to take the plastic wrapper off the turkey breast before you cook it. And remember to turn the stove on. And remember to brush your teeth twice a day. I’ll stop now.

Don’t want to cook a turkey? I hear ya. There are usually turkey breasts available with the rotisserie chickens at local grocery stores.

Turkey & Dumplings with Fresh Herbs

Ingredients
  

  • 8 cups broth vegetable, chicken or turkey
  • 3 large stalks celery coarsely chopped
  • 1/2 large yellow onion coarsely chopped
  • 1 T flour
  • Herb bouquet of approx 10 leaves tarragon 2 stalks rosemary and 3 stems thyme
  • 1 t each extra of each herb chopped
  • 4 cups shredded turkey breast
  • 1 tube Pillsbury Grand Biscuits Original
  • Salt and Pepper to taste

Instructions
 

  • Add flour to one cup broth and whisk until fully dissolved, no lumps.
  • Add this mixture to 7 cups of broth in a large pot with celery, onion and herb bouquet.
  • Bring to a boil over high heat and cook for about 10 minutes, or until vegetables are soft.
  • Add shredded turkey and return to a slow boil.
  • Open biscuit container and tear each slice of uncooked biscuit dough into 3 pieces and add to the boiling broth. Make sure to complete this process as quickly as you can so that the dumplings are cooking at the same time.
  • Cover pot and cook for 3 minutes.
  • Turn off burner and remove herb bouquet and add in fresh chopped herbs.
  • Finish with some black pepper to taste (added salt is optional; most broth has plenty of salt!)
